Dal racconto della mia incantevole sosta all’Hotel Monte Mulini vi ho lasciati con il fiato sospeso per alcuni giorni…

Il fantastico soggiorno a Rovigno sì è concluso nel migliore dei modi: nella moderna cantina del ristorante dell’albergo, il prestigioso ed esclusivo Wine Vault!

Al mio arrivo uno staff ben assortito mi accoglie per una degustazione di olii e vini delle terre croate, ed un simpatico quanto estroverso personaggio, con un perfetto accento britannico, viene a darmi il benvenuto. È Andrew Gaskin, Cluster Executive Chef, di origini londinesi!

Questo mix di cucina francese, creata da uno chef inglese, e sublimata da vini locali, davvero mi incuriosisce!

A chef and an artist all at once

Andrew Gaskin is not a cook, not even a chef… simply put, he is a hyperactive artist with food as his medium and cooking as his chief technique.

“Hotel kitchens have in some way marked my professional career. Things came together that way and the kitchens have drawn my map of the world, which I travelled around, working and living in various places, from UK to Malta, China, exotic islands, France, Italy… And now I’m in Rovinj, a fantastic Istrian town”.

“We wow our guests, we spoil them and entertain them and, if necessary, shock them a bit”. He particularly remembers the lunch prepared for Queen Elisabeth II during her visit to Malta.

Za Gaskina bi se teško moglo reći da je kuhar, iako je njegov životni put, dakako, obilježio boravak u kuhinjama. Za sebe kaže da je ‘dobra berba’, rođen 1962. godine u Londonu. Prije bi se moglo reći da je jedan od onih urbanih nomada koji se, čak i ako se ne sele svakih par godina i ne provode pola života u avionima, putuju virtualno.

“Svijet je knjiga, a ako ne putujete, to je kao da ste pročitali samo jednu stranicu i propustili sve ostale”, jedan je od životnih lajtmotiva Britanca koji se doselio u Rovinj.

The evening was a delight as Andy and his talented young team kept things rolling along with inventive, tasty and groundbreaking food. The big thing about Andy’s cooking is his modesty. He is almost shy about the clear achievements in his kitchen. They don’t have the Michelin Star system in Croatia but it has been rated as a one star. This is deserved as the sheer energy that goes into producing a meal at the chef’s table testifies.

New head chef of Maistra’s luxury hotels

Maistra has reinforced the kitchens team of its luxury hotels with Andrew Gaskin from Great Britain, who has taken over the position of the head chef at the Monte Mulini and Lone hotels, as well as the newly opened Adriatic boutique hotel in Rovinj. His impressive career began 35 years ago, and he perfected it in numerous restaurants in Asia, Africa, France and Italy. He has cooperated with world-renowned Michelin-starred chefs Michel Rostang and Fulvio Pierangelini, he was a part of teams in Michelin-starred restaurants in Rome (1 star), Monte Carlo and Paris (2 stars) and Bray, Great Britain (3 stars), and has prepared dinner for many famous persons, among them Queen Elizabeth II at CHOGM in Malta.

Svoju bogatu karijeru koja je započela prije 35 godina, gradio je u brojnim restoranima u Aziji, Africi, Francuskoj i Italiji. Surađivao je sa svjetski poznatim kuharima s Michelinovim zvjezdicama Michelom Rostangom i Fulviom Pierangelinijem, bio je dio timova u restoranima s Michelin zvjezdicama u Rimu (1 zvjezdica), Monte Carlu i Parizu (2 zvjezdice) te u Brayu, Velika Britanija (3 zvjezdice), a večere je pripremao za mnoge slavne osobe među kojima i za kraljicu Elizabetu II na CHOGM na Malti.

Chef’s Table at the Wine Vault Restaurant in Rovinj

Over the years we have traditionally celebrated our anniversary at a nice restaurant but this year, 2.5 months into our world tour and with our 10th anniversary at hand, we looked for something truly special.

A true culinary marathon, we made our way through 19 courses, 5 different Croatian wines, and 3 kinds of grappa to round off the night. We also got a real kick out of being guinea pigs for a new dish – a foie gras ice cream bar. All in all, 5 hours later, we can safely say this was one of our very best food experiences. One that we will never forget.

Der Brite Andy Gaskin hat die kulinarische Leitung in den Hotels Monte Mulini, Lone und im neuen Boutique-Hotel Adriatic in Rovinj übernommen. Gaskin blickt auf eine 35-jährige Karriere als Koch und Küchenchef in Asien, Afrika, Frankreich und Italien zurück. So war er zuletzt im Le Méridien im chinesischen Zhenzhou sowie im Verdura Resort auf Sizilien tätig und arbeitete eng mit renommierten Sterneköchen zusammen. Im Rahmen seiner neuen Position als Luxury Cluster Executive Chef bei Maistra ist Gaskin für die Aus- und Fortbildung der einzelnen Teams, für die Qualitätskontrolle sowie für die Weiterentwicklung der kulinarischen Konzepte zuständig.

When Science and gastronomy mix

An unusual two-day kitchen chemistry workshop was organised at Le Méridien St Julian’s for over 30 chefs from Malta’s leading five-star hotels at Starwood Hotels and Resorts, Malta. The purpose of the workshop was to help the kitchen brigades of Le Méridien Phoenicia, Le Méridien St Julian’s and the Westin Dragonara Resort understand the latest unique techniques of culinary excellence, combining classical cooking with the science of food.

The three executive chefs, Victor Borg at Le Méridien Phoenicia, Andy Gaskin at Le Méridien St Julian’s and John Hornsby at the Westin Dragonara attended the workshop along with their teams.
